Interesting observation: converting an episode of Buffy (~44 minutes of video) to a format useful to iTunes, the iPod video, Front Row, and other video players (MP4) takes about 2-1/2 hours on a 1.6 GHz Mac with the PowerPC G4 chip. It is about 2 hours on a G5 chip of the same speed. Converting the same on a low-end Mac Mini (a slower chip, at 1.4 GHz, but based on the single-core Intel processor) takes about an hour. Memory can't be the issue, as both PPC machines have well over a gig and aren't running any other apps, whereas the Intel box has the stock 512MB, so it has to be the processor. Yeay for progress!
